Like most moms, I struggle every week to find something new and different to make for dinner. Given our busy lives it needs to be simple and quick to prepare, but healthy and delicious at the same time. Spaghetti Pie is the perfect solution. What kid doesn’t like spaghetti and meatballs? And what can be better than putting that in a pie? Serve with a salad and fruit and you have a meal the whole family will enjoy!

Spaghetti Pie – Personalize Just for Your Family

This recipe takes no time to prepare and is well suited for left overs. There are numerous spaghetti pie recipes available on-line and this dish easily lends itself to making adjustments based on your family’s taste. For our family, I used equal parts 90% lean ground beef and Italian turkey sausage. Mixing the meat component adds extra flavor, and using turkey sausage helps keep down the fat content of the dish. I also added fire roasted petite diced tomatoes and some of our favorite Italian herbs. If you prefer you can add diced fresh tomatoes and whatever herbs your family enjoys. You can switch out your pasta – I used a thin fettuccine noodle – or use a different variety of Italian cheeses. Customize this dish for your family and it will be a hit for dinner!

Spaghetti Pie Recipe

Preheat oven to 350 degrees.

First, prepare your pasta. I used a thin fettuccine, but any long thin pasta will work. Place cooked pasta in a bowl and add 3 whisked eggs, 1/2 cup grated parmesan cheese, 1/2 cup shredded parmesan cheese, and 1 cup shredded Italian cheese.

Add 1/2 pound ground beef and 1/2 pound Italian turkey sausage and saute until cooked through.

Add 1 can fire roasted petite diced tomatoes and 3/4 cup tomato paste. Stir to combine.

Add 1/2 teaspoon each of dried basil, oregano, thyme and parsley. Season with salt and pepper to taste.

Lightly brush the bottom of a 9 or 10 inch deep dish pie pan with olive oil.  Spread 1/2 of meat mixture in the bottom of the pie pan. Layer pasta mixture on top of meat mixture and smooth to make even.

Looks amazing, Anastasia! Do you think I could leave out the meat entirely for a vegetarian option?

    • Hi Kathy! Yes, you could definitely leave out the meat. You could add a simple marinara or tomato sauce, or use chopped roasted vegetables (or even just sauteed mushrooms and peppers) in place of the meat. I think that would be a great alternative to the dish. You need a base on the bottom, and sauce on the top but either plain or with vegetables would be great. If you make a vegetarian option, please let me know how it is. Now I want to try it with roasted vegetables. Hope all is well with you!
